POUCHANG
Pouchangs are the least oxidized of the oolongs (12% to 18%). Not truly greens, yet not wholly oolongs (the greener oolongs undergo 30% oxidation, dark leafed oolongs 70%). The leaves for Pouchang tea are withered in the sun or indoors, pan-fried, dried twice and then sorted. This typically open, slightly twisted olive green leaf yields amber-green liquor that has a delicate, sweet aroma and a slightly sweet, delicate, smooth flavor. From Wenshan, Taiwan, the cultivar is Chinsin Oolong, about 15% oxidized. Lightly rolled with curly leaf. Very refreshing aroma and naturally sweet finish. $4 per person / $8 per pot
LISHAN OOLONG
Lishan Oolong Tea is grown on Li Mountain (Lishan) in Taiwan’s Taichung County. A high mountain tea known for its incredible flavor and aroma, Lishan Oolong Tea is grown at 1800 to 2600 meters above sea level in the highest tea-growing region in Taiwan. The atmosphere at this high altitude has year-round low temperatures and abundant moisture, which gives this tea its lovely orchid aroma with a long lasting flavor and a hint of flowers. This tea is truly something special. It is known as the best high mountain Oolong Tea in the world. Our Lishan is from the Chinsin Oolong cultivar. It is about 20% oxidized and has tightly rolled leaves to seal the good aroma and taste in. Infuse with 200F for 5 minutes to serve. $4 per person / $8 per pot
PEONY OOLONG
A very fine oolong with the delicate kiss of peony for a finish you will remember. This is a creative blend of heavier oxidized Formosa Oolong and the China White Peony. This tea is naturally fruity and a nice afternoon refreshing tea. Great for cocktail creations. $3.50 per person / $7 per pot
JADE OOLONG*** HIGH GRADE
One of Taiwan’s most delectable Oolongs comes to us from Yu Shan (Jade Mountain). The rich, green loosely rolled leaves yield a tawny infusion that has a complex, delicate, floral aroma and flavor and a deliciously smooth finish. This is a total knock out.
